High ester producing yeast and slow and cool fermentation.
Showing characteristic herbal and floral qualities, the 2021 Peake Ranch Vineyard Chardonnay poses powerful aromas of white flowers, lemongrass, guava, and yuzu. The classic bright nature of this wine is evident in the acidity found through the palate. The wine displays a refreshing taste of apricot and honey driven flavors on the mid-palate. Lingering herbal qualities continue to the finish with a note of vanilla.
The 2021 Sierra Madre Vineyard Chardonnay has aromas of white flowers and grapefruit rinds. On the palate acidity is present first, before revealing a natural weight mid-palate, providing balance throughout. Pineapple and mellow honeydew meld togher flawlessly on the finish.

The 2021 Santa Barbara County Chardonnay is the perfect encapsulation of the Central Coast. This bright and expressive wine exudes fresh notes of lemon zest, brioche, and citrus blossoms. There is a pleasant balance of acidity and texture along with a long finish. As it lingers, a delicate cinnamon and apple combination will start to surface.

The 2021 vintage of the Peake Ranch Vineyard Pinot noir has alluring aromas of dried flowers, dark cherry, pomegranate, and caramel. Vibrant acidity and raspberry flavors are immediately present. Abundant refined tannins create a pleasant mouthfeel that is luxurious and contains elevated fruit concentration.
From a windy site on the eastern slope of the Sta. Rita Hills, we produced a Pinot noir that embodies power, structure, and concentration. With a deep magenta color, this wine has a fruit driven nose that embodies the essence of plum and strawberries complimented by intense floral qualities of jasmine and hibiscus. Long tannins provide a solid backbone for the beautifully balanced acidity. This wine shows ageable promise for those willing to cellar for a few years.
A compelling example of what can be achieved with Sta. Rita Hills Pinot noir. This wine captures the natural balance and complexity of this special appellation. The vibrant garnet color draws you in, accompanied by a bouquet of red fruits and herbal qualities. Sage, currants, and raspberry dominate the nose, while cranberry and pomegranate play a key role on the palate. The balance of tannins and bright acidity carry through from start to finish. This single block bottling displays a deep garnet red hue. Aromas of wild blackberries, black currant, cinnamon stick, graham cracker, and dried rose petals. The acidity is soft yet present, with tannin leading from mid-palate to the finish. The wine has flavors of berry pie, cedar, and dried oregano. The finish is complex and lingering.

This wine is a tribute to Daisy, our beloved winery dog (see her image on the cork!). Bellis Noir combines the brightness of Grenache with the brooding aspect of Syrah. The 2021 Bellis Noir opens with wild blackberry, licorice, and lavender on the nose. A lovely expression of angular tannins dominates the palate while notes of plum and peppercorn carry through to the signature silky finish.
